I just recently got Jeffery Hamelman's book and wanted to bake something rather easy this weekend since I don't have a whole lot of time. This bread is delicious and the recipe is posted as one of the favorites on
the fresh loaf. In any case this recipe makes a lot of dough, so I think I brought enough for the rest of the class. I had to 9x5 pan so I filled them with 24 oz of dough and one 8.5x4.5 pan which I filled with 20 oz of dough. That left enough to fill with a little muffin tin! The top crust is overdone but I just found out my oven hits 475 when set to 450, this is something I've never noticed before and I do keep an oven thermometer in there. Oh well, it's still light and fluffy and taste wonderful toasted with the slightest touch of butter. Here's a few pics:
